Ice Cream Cake Pops

You will need

Dark chocolate
White chocolate
Cake pop dough
Small waffle cones

Cake Pop Dough

Add half a cup of buttercream or chocolate ganache to the crumbs of an 8 inch cake. Cover your cake tin with foil to prevent a crust forming on your cake. Mix the crumbs and buttercream together with a fork until you form a dough.

Make your Ice Cream Cake Pops

In a small microwave safe bowl melt your dark chocolate. Microwave on low for 30 seconds, stir well, and repeat until the chocolate is completely melted and smooth. Repeat with the white chocolate and leave to one side.

Roll balls of cake pop dough big enough to fit inside your cone.

Dip the waffle cone in the melted dark chocolate, and stick your cake pop ball in place. Pop in the fridge for 15 minutes until the chocolate has set, and the cake pop dough has chilled. Depending on the size of your cone, you can lean the ice cream cake pop inside a drinking glass, or small cup so that the cake pop dough stays in place and doesn’t get a flat side.

Once it’s set, dip the cake pop dough in the white chocolate. Gently tap away the excess chocolate, and leave until the chocolate has set.

Use the end of a chopstick or a small teaspoon to spread melted dark chocolate on top of your cake pop and make a chocolate drizzle. Top with sprinkles and enjoy your ice cream cake pop!
