Our Peanut Butter Banana Bread is the perfect morning tea treat! Filled with bananas and just a hint of peanut butter, it’s a fun twist on a traditional banana bread. Cut slices in half and freeze for lunch boxes, or keep out of reach of the kids for a well deserved late night snack! Peanut Butter Banana Bread
2 cups plain flour
2 tsp baking powder
3 tsp cinnamon
2/3 cup light brown sugar
1/2 cup milk
3 over ripe bananas, mashed
60g melted butter
1/3 cup peanut butter
1/3 cup light brown sugar, extra
2 tbsp natural sliced almonds, to serve
To make your peanut butter banana bread, sift together the plain flour, baking powder, and cinnamon into a large bowl. Stir in the brown sugar pressing your spatula against the side of the bowl to smoosh any sugar lumps.
In a jug lightly beat the eggs and milk together, then mix in the mashed banana and cooled melted butter.
Make a well in your dry ingredients and add the banana mixture.
Stir well making sure to scrape the bottom of the bowl. Once the wet and dry ingredients are combined, stir through the peanut butter.
Grease a loaf pan with plenty of butter and dust well with plain flour. Pour in the peanut butter banana bread batter and level with your spatula. Sprinkle with the extra brown sugar and bake in a pre-heated oven at 180*C for 45-50 minutes, or until a skewer inserted into the centre of the loaf comes out clean. Allow to cool in the tin for 15 minutes before turning out onto a rack to cool completely. When just warm sprinkle with natural sliced almonds and serve in slices.
