Include everyone in your festivities with our Berry Fizz Mocktail! You’ll need a big jug that can hold about 1.5-2L, and an hour up your sleeve. Making the Berry Fizz mocktail in advance ensures those berries infuse their flavour into your lemonade and coconut water! If you prefer to use plastic instead of the glass for drinks, you can still jazz up the tops with white chocolate and coconut, or prepare the toppings and let guests coconut up their own glasses! We used frozen berries to keep the drinks cool without diluting the flavour of the mocktail.

50g shredded coconut*
200ml coconut water
200g assorted fresh berries
200g mixed frozen berries[/column][column type=”2/3″ last=”true”]In a microwave safe bowl, melt the white chocolate in a microwave at low power for 30 seconds. Stir, then repeat for 10 second intervals until the chocolate is melted and smooth.
Pour the melted chocolate onto a plate or into a disk that is wide enough to fit the rim of your glasses. Pour the coconut onto a separate plate, or piece of baking paper if you’d like to re-use any excess coconut.
Make sure your glass is clean and dry, drip the rim of the glass into the melted chocolate. Immediately dip the chocolate dipped glass in coconut. For a dainty look, barely dip the glass into the chocolate before coating with the shredded coconut. You could also try powdered freeze dried berries, or moist coconut flakes. Repeat for all your glasses and pop in the fridge to chill.
In a jug large enough to hold more than one litre, add the lemonade, washed fresh berries, and coconut water. If you want ot use strawberries, hull and quarter them before adding to the lemonade.
Add the frozen mixed berries straight from the freezer right before serving. They’ll keep your Berry Fizz Mocktail cold without diluting the flavour, and as they melt they’ll add to it too!
For a Berry Fizz Cocktail
Add a nip (30ml) of good quality gin for every adult at your bash, and keep it well away from kids.
