After a year of kid’s parties and family celebrations, our Cake Batter Cocktails are the perfect just-for-Mum treat to bring in the New Year! Instead of using fancy cake batter flavoured vodka which is difficult to find in Australia, we’ve used spirits you might already have in the cupboard and could easily find at your local bottle shop. You could use vanilla vodka if you have it, but we found that vodka made our cake batter cocktails a little too strong and a little less cake flavoured, we used a natural vanilla extract (the same that we use in our cake recipes) for that extra cake-y flavour! If you don’t have a lime or lemon dampen a piece of paper towel or a clean finger and run it around the rim of your glass, you don’t need much moisture, just enough for your hundreds and thousands to stick. If you can’t find White Creme De Cacao, just use regular Creme De Cacao and make yourself a Chocolate Cake Batter Cocktail! The recipe below is a single serve made to fit perfectly in one (Mum’s) martini glass.
Cake Batter Cocktails
30ml Butterscotch Schnapps
30ml White Creme De Cacao
2 tbsp Cream
1/8 tsp Natural Vanilla Extract ** see note above
Lime or lemon wedge ** see note above
Hundreds and thousands
Cut a wedge of lime and run it around the rim of your glass.
Pour hundreds and thousands onto a dish or into a bowl and run the rim of your glass through the hundreds and thousands so they stick to the rim. Leave your glass to one side while you make your cocktail.
Fill a large drinking glass or cocktail shaker with ice.
Add 30ml each of Butterscotch Schnapps and Creme De Cacao to the glass or cocktail shaker filled with ice.
Top with 2 tbsp of cream and 1/8 tsp of vanilla (or a little splash of vanilla if you don’t want to measure – it’s been a long year!).
Add the lid to your cocktail shaker and shake, shake, shake. Or, if you’re using a glass, use a spoon and stir, stir, stir!
Use a cocktail strainer, or tea strainer, to pour your cake batter cocktail into your glass and drink up! Cheers to 2017!
