Sweet Magazine - Mug Cakes - Best Every Sticky Date Pudding Cake For One


Cold weather brings with it a little of the can’t be bothereds, and there’s nothing like a little pudding for one to warm you up, especially when it’s fuss free with minimal washing up! This sticky date pudding is the ultimate microwave mug cake. There are a few more steps than your usual cake for one, but trust us, it’s totally worth it!

You’ll need: 10 pitted dates, quartered, 2tbsp boiling water, 2tbsp butter, 1tbsp brown sugar, 1 egg yolk, 1/8 tsp vanilla bean paste, large pinch cinnamon and 2tbsp self raising flour.

Cut dates into four pieces with scissors, cover with boiling water, and microwave for 1 minute. Mash with fork and stir in butter until melted. Stir in sugar, yolk, and vanilla. Add flour and cinnamon, stir till combined then microwave 30 seconds at a time until the top has set, about three times (90 seconds).

Top with a quick microwave caramel. You’ll need: 1/2 tbsp butter, melted, 1tbsp brown sugar and 1tbsp cream.

Melt butter, then stir sugar and cream in to butter. Microwave for 30 seconds, stir until cool, then pour over your waiting sticky date pudding in a mug. Add ice cream and you’ve got the best ever sticky date pudding for one. Avoid sharing, or you’ll have to make it for two!
