Valentines Cookie Love Letters

Valentines Cookie Love Letters

You’ll need:

Dr Oetker Ready to Roll Icing – Red
Dr Oetker Ready to Roll Icing – White
Dr Oetker Easy Icing – Pink
Dr Oetker Easy Icing – Blue
Small non-stick fondant rolling pin
Stitching embossing wheel (optional)
Small sharp knife
Butterknife
A batch of your favourite biscuits, baked into rectangles (you can also just use store bought biscuits!)


Start by making the fondant decorations for your love letter cookies. Roll out some red Dr Oetker Ready to Roll Icing (fondant) to about 2mm thick. Then use your embossing wheel to indent the fondant lengthways and crossways. Allow to set for a few minutes then use a sharp knife to cut between the embossed lines. This will create stamps and the look of perforations. If you don’t have an embossing wheel, skip this part and just cut the fondant into small rectangles to make your stamps. Repeat with some white.

To make mini hearts for your stamps and the “backs” of your envelopes, start by rolling a small ball of fondant. Pinch one end between your thumb and finger, then carefully press your butter knife into the top of the ball. Gently press the ball flat between your fingers to create a heart. Repeat until you have enough hearts using both the red and white fondant.

Take a packet of Easy Icing and, before opening, knead well for about two minutes to ensure the icing is well mixed. Use a pair of scissors to cut a tiny corner from the packet that leaves an opening about 2-3mm wide.

Gently squeeze the Easy Icing to pipe a border around the edge of your biscuit. Fill the centre with more icing and use a butter knife or palette knife to spread the Easy Icing evenly. Allow to sit for about 8 – 10 minutes.

To create the back of your envelope. Pipe a V shape, then two diagonal lines to meet the V. Add one of your hearts to the centre to create a seal for your envelope.

For the front of your envelope, pipe two lines of Easy Icing. Add a stamp and heart to the top right hand corner of your biscuit.

Repeat with different colour combinations and there you have it! Easy Icing Valentines Cookie Love Letters!
