White Christmas is one of those quintessentially classic Christmas recipes that puts you instantly in the festive mood, even better – it’s no bake! Melt, mix, pour, and set for a plate full of festive sweets!

Ingredients
1 block copha, melted
1 cup icing sugar, sifted
1 cup powdered milk
100g white chocolate, melted
3/4 cup shredded coconut
1 cup mixed dried fruit
3 cups rice bubbles
Extra melted white chocolate to decorate
Silver chocolate balls to decorate
Make your White Christmas
You can make your White Christmas in mini patty pans, but we prefer to slice it into generous portions. Line a slice tray or square cake tin with baking paper and set to one side.
Chop the copha into small pieces and melt in the microwave on low power for 30 seconds, mix well and repeat until the copha is completely melted.
Add the copha, icing sugar, and milk powder to a large bowl and stir well to combine.
Melt the chocolate in the microwave on low power for 30 seconds, mix well and repeat until the chocolate is completely melted. Mix the chocolate through the copha mixture.
Fold in coconut, rice bubbles, and mixed dried fruit. You can use a packed of pre-chopped and mixed dried fruits, or choose your own favourites to add to the mix.
Drizzle over extra melted white chocolate and sprinkle with silver chocolate balls.
Pour into the prepared tin and refrigerate for at least an hour.
Cut into squares and pile high, or pop your white christmas into jars for a sweet home made gift.
