Vanilla Bean Shortbread

We love working with the businesses that help us to bring Sweet Magazine to you every couple of months! Issue Five was supported by fab businesses including TBD Imports who bring us delicious Singing Dog Vanilla Organic Vanilla Beans and Illume Design. So to get us all in the mood to Celebrate! we’re sharing our favourite, easy, peasy vanilla bean shortbread recipe and a fun way to package up as home made gifts!

Vanilla Bean Shortbread

Ingredients
250g butter, chopped
1/3 cup rice flour
2 cups plain flour
1/4 cup icing sugar
2 tsp Singing Dog Vanilla Organic Vanilla Bean


This recipe is made with a food processor, but you can also make it in a bowl. Just rub together the sifted dry ingredients, butter, and vanilla with your fingertips to form a crumb. Tip out the crumbs onto a lightly floured surface and press together. Gently knead until a dough forms.

If you’re using a food processor, pop the flour, rice flour and icing sugar straight into the food processor with your vanilla bean paste and give a quick pulse to remove any lumps and distribute the vanilla bean paste.

Add in the chopped butter and pulse a few times until you’ve got a crumb (just like if you’d rubbed the butter and flour together by hand). Then turn to the lowest setting and process until a dough forms.

Turn on to a lightly floured surface and press into a disc.

Roll to about 5mm thick and cut out your shapes. Place onto a biscuit tray lined with baking paper and bake in an oven pre-heated to 150*C for about 15minutes until the shortbread is lightly golden.

Allow to cool on the tray slightly before moving to a cooling wrack to cool completely.

Store in an airtight container for up to a week (if they even make it to the container!).

Gift Packaging

We’re crushin’ on the new range of gold and silver chevron from Illume Design.

We’ve used the cupcake wrappers and their matching napkins to package our sweet gifts! The gold and silver napkins have a metallic stripe running through them which adds some extra chic to our Christmas treats (and perfect for New Years too!). Simply fold the bottom corner of the folded napkin (the corner that isn’t open) one quarter of the way up, and put inside the cupcake wrapper. Open the napkin out in the centre and put your shortbread inside. Tie with matching Merry Christmas tags and a sweet message to finish off your gift!
