That’s right, two ingredient! Even better, you’ve probably got both ingredients in your fridge. Super simple and easy to make, there’s no egg or any other raw ingredients in this mousse, but it’s seriously delicious! This one’s best made with hand held beaters. If you’re using your stand mixer, place water in the bowl and put in the freezer 30 minutes before you start. Once your chocolate has cooled, tip out the water and dry well before whipping up your chocolate mousse mixture.

200g dark chocolate, melted
1 can coconut cream, refrigerated overnight
Choose two bowls that fit inside each other. Fill the largest bowl a quarter full with water, and put in the freezer.
Break the chocolate into even pieces and place in a microwave safe bowl. Melt for 30 seconds on low and mix well. Continue in 15 second bursts, stirring well in between each burst until the chocolate is fully melted. Leave on the bench to cool to room temperature, stirring occasionally to help the process along.
Add the coconut cream to the melted chocolate. Place the bowl over the bowl of cold water, the bottom should touch the cold water, but be careful that it doesn’t get into the mixture. Use your hand held beater to whip the chocolate and coconut cream until the mix starts to thicken.
Remove from the cold water and quickly spoon into prepared bowls or glasses, and pop in the fridge to set. Serve with fresh whipped cream and chocolate shavings. Yum!
