Home Made Rocky Road Easter Eggs
Home Made Rocky Road Easter Eggs are simply half of a chocolate Easter Egg piled high with your favourite home made rocky road mixture. We’ve kept things simple using chocolate, coconut, and marshmallows – a classic rocky road mix. Customise your rocky road to each recipient using a sprinkling of their favourite sweets. We’ve kept ours Easter themed with chocolate bunnies and mini chocolate Easter Eggs, either way our Home Made Rocky Road Easter Eggs make a super thoughtful and super delicious gift![column type=”2/5″]
You Will Need
- 200g milk chocolate, melted
- 50g white chocolate, melted
- optional store bought or home-made Easter Eggs
- 1 cup moist coconut flakes
- 1 cup salted peanuts
- 2 cups vanilla and strawberry marshmallows
- Chocolate bunnies
- Mini chocolate Easter eggs
To start use either a store bought Easter Egg carefully separated at the seam using a hot butter knife, or your own home made Easter Eggs. We’ve used bothe pre-made home made Easter Eggs, and made a fun pink and white Easter Egg shell for our Home Made Rocky Road.
To make your own half Easter Egg shell. Melt some extra white chocolate in the microwave; zap for 30 seconds, stir well and then return to the microwave for 15 seconds at a time, stirring between each zap until the chocolate is fully melted. Colour a small amount of the chocolate pink using oil-based chocolate colouring. We use this pink food colouring (this is not an affiliate or sponsored link, but we do highly recommend this store and this product). [/column]
Drop uneven amounts of the melted white and pink chocolate into your Easter Egg mould, and use a spoon to swish all the colours together. Ensure the mould is coated in an even amount of chocolate and leave in the fridge to set while you make your rocky road.
Melt your milk chocolate in the microwave. Blast for 30 seconds and stir well. Return to the microwave for 15 seconds, stir well and repeat until the chocolate is fully melted. Be sure to stir well after each 15 second blast. Carefully melt your white chocolate in the same way, if you have oil based food colouring, colour your white chocolate the desired colour and set aside.
In a large bowl mix together the melted milk chocolate, coconut, peanuts, and ¾ of the marshmallows until everything is well coated with melted chocolate.
Spoon the rocky road mixture into your Easter Egg shell and squish some un-chocolate coated marshmallows into the shell amongst your rocky road. Top with mini Easter Eggs and chocolate bunnies, and drizzle with your extra white chocolate. We coloured ours pink.
Leave to set in the fridge, then package in clear cellophane to give as gifts – or grab a cup of tea and dig in!
