Easy Easter Treats – Chocolate Rice Bubble Eggs

A delicious Easter themed snack, make in advance and get the little hands in the family busy decorating them at your family get together. Great for styling, you could even make these up with coloured white chocolate and use cookie cutters to shape these super tasty sweet treats!

Ingredients

200g melted, cooled chocolate
1 1/2 cups Kellogs Rice Bubbles (plus extra if the mix is sloppy)
A round egg ring, smooshed into an egg shape
Sprinkles or 100’s & 1000’s
And Baking Paper.


Method

Melt chocolate in a microwave safe jug on low in 30 second bursts until melted. Allow to cool, but not set.
Mix Kellogs Rice Bubbles into the melted chocolate until all the bubbles are evenly coated. You don’t want a sloppy mixture, add extra bubbles until the mix is even and the chocolate doesn’t pool at the bottom of your jug.
Spoon a tablespoon of mixture into your egg ring and flatten with a clean(ish) spoon. The more chocolate-y the spoon, the more likely that the mix will just stick to the spoon and not stay in your egg ring.
Carefully remove the egg ring, and repeat.
Set in the fridge for 5 to 10 minutes and decorate!

We used 100s & 1000s, sprinkles, soft cashous, and pre-made royal icing flowers, all stuck on with melted and cooled white chocolate. We also made a huge mess.

Get creative and get the kids involved, it’s a yummy and fun way to spend an afternoon!
