Looking for a fun and easy last minute addition to the Christmas dessert table? This Easy Choc Mint Fudge features Rudolph, is a great hands on activity for big kids who want to help in the kitchen, and takes about 15 minutes to whip up.
Easy Choc Mint Fudge
100g unsalted butter
250g caster sugar
200g milk chocolate
200g dark chocolate
1 tin condensed milk
2 tsp peppermint extract
If you can’t find candy eyes, just use white M&Ms with a little dark chocolate in the centre. Or melted white chocolate with a little dark chocolate in the centre. Make your chocolate eyes ahead of time on some baking paper so that all your decorations are ready to top your fudge right after you pour it into your pan.
To make your Easy Choc Mint Fudge melt together the butter, chocolates, and caster sugar in a large bowl set over a saucepan of gently simmering water. Stir constantly until the chocolate and butter have melted and combined. Continue to stir until the sugar is mostly dissolved.
Add the condensed milk and mix well, then add the peppermint extract and stir well to make sure the flavour is well distributed.
Break pretzel knots in half to create reindeer antlers for Rudolph and have your decorations ready before pouring your fudge into a lined tin. The fudge forms a skin quickly and can make it hard to stick your decorations on if you wait too long.
Pour your fudge into a slice or cake tin lined with baking paper. Add two pretzel halves, two eyes, and a big red nose.
Pop in the fridge to set overnight before serving!
